Sitmar Cruises was a renowned passenger shipping and cruise line founded in 1937. Originally known as an immigrant carrier for the European-Australian route, it successfully transitioned into a luxury cruise line in the 1970's. 

This menu, from a cruise on the T.s.s. Sky Princess, has a watercolor image by Noah Betts of two yellow angelfish.
